Cake Flavors

Genoise with Hazelnut Syrup

Traditional French sponge cake, genoise has a very light and elegant texture that delicately absorbs our fresh handmade hazelnut syrup. We also offer syrups of raspberry, coconut, pineapple, tiramisu/espresso or any flavor you like.

Rich Chocolate Ganache Cake

Moist ‘melt in your mouth’ chocolate cake, flavored with Madagascar vanilla or your choice of Bourbon, Amaretto, Frangelico or Grand Marnier.

Simply Vanilla

A rich yet delicate yellow Buttercake flavored with Madagascar Vanilla Bean. Can also be flavored with Liqueur or fruit to complement specific filling and buttercream flavors.

White Velvet Butter Cake

This soft and subtle buttercake is velvety smooth, and the perfect base for lighter fillings and fresh fruit.

 

Basic Icings

Classic Meringue Buttercream

A light and fluffy Buttercream that tastes like whipped cream yet holds up extremely well in our warm tropical climate.

Chocolate Buttercream

Flavored with two kinds of chocolate and Frangelico or liqueur of your choice.

Rolled Fondant

Buttercream Infusions

Start with Our Classic Buttercream infused with the following:

Lemon Chiffon - A subtle hint of lemon, delicate and light.

Mocha-Espresso - Perfect for “tiramisu” cake.

Coconut Cream - The tropical flavor of Coconut rum in a light cream.

Golden Grand Marnier - Orange liqueur blended with buttercream.

Peanut Butter Mousseline - Whipped peanut butter and buttercream combined.

Chocolate Ganache Creams

Dark Chocolate Ganache - Combination of two chocolates and cream.

White Chocolate Ganache - Combination of Madagascar vanilla and cream.

Fruit, Nut, Cookies & Candy Fillings

Fruit: Mango, pineapple, strawberries, raspberries, kiwi, banana.

Nuts: Pecan, almond, or walnut praline.

Candy: Snicker's, Reese's or Oreo crumbles.

Fresh Tropical Flowers

Caribbean flowers will beautifully enhance your wedding cake. We can even match the flowers to your bridal bouquet. (price dependant upon floral selection.)

Gumpaste and Molded Chocolate

Almost any three dimensional shape can be replicated using gum paste or molded chocolate. Flowers, figurines of people, cars, animals or sea creatures can be created. We can design anything!
